Paul Dickson, The Great American Ice Cream Book, Atheneum, 1972 This book is a "history of ice cream book". It concentrates on the development of ice cream in the US, and is interesting reading even though it claims as fact the apparently ficticious but oft told ice cream stories of Marco Polo, Henri II of France, and Charles I of England. It ends with a short list of recipes. Note, however, that most of the recipes are listed for historical interest, and give substandard results by modern ice cream standards. Lots of interesting ice cream stories and a nice collection of black-and- white photos of turn-of-the-century ice cream equipment.
