Summary:
This book begins with a brief summary of home ice cream
machines, followed by a discussion of various ingredients and
tips for making ice cream.
The bulk of the book consists of recipes, with a chapter
each for ice cream, sorbets, sherbets, gelatos, ice milks,
frozen yogurts & tofu ice cream, sauces, and ice cream
desserts. Over 100 recipes.
Critique:
The book has a lot of pictures (roughly one per recipe).
I like the discussion in the beginning about machines,
ingredients, etc. Although brief, it's informative, and
appropriate for the casual ice cream chef. The recipes
look reasonable, although I haven't tried any yet (1/98)
