Ben's Chocolate (March 28, 1995) 2 eggs 1 cup of sugar 4 oz unsweeten chocolate 1 cup milk 1 cup whippping cream 1 tsp vanilla 1 pinch of salt Beat eggs lightly. Beat in sugar. Melt chocolate under low heat. Stir in milk little at a time. Heat until smooth. Stir hot chocolate/milk into eggs/sugar. Stire in cream, vanilla, and salt. Cool. Freeze in ice cream maker. This recipe is from the Ben and Jerry Ice Cream book. Note that the chocolate really should be unsweetend. Find a high quality chocolate if possible. When I froze this ice cream, it froze early. This means that the beaters stopped churning before the ice cream was at a proper freezing point. I.e., it was still a bit gooey. The taste, however, was quite good. Ben's Chocolate (April 17, 1994) 2 cups whipping cream 1 cup milk 4 oz semi-sweet chocolate 3 eggs, separated 1 scant cup of sugar 1 tsp vanilla 1 pinch of salt Heat cream, milk, and chocolate in a pan over medium heat until chocolate begins to melt. Reduce to low heat until chocolate completely melted, then raise to medium heat and stir until milk just comes to a boil Beat eggs yolks in bowl; beat in sugar. Add hot milk/chocolate mix to eggs, stirring as you add. Cool, add vanilla and salt. Freeze in ice cream maker. This recipe is based on Ben's Chocolate from the Ben and Jerry Ice Cream book. Chocolate (April 4, 1995) [1.5 quarts] 4 oz unsweetened chocolate (I used Ghirardelli) 1 1/4 cup milk 2 eggs, lightly beaten 1 cup sugar 1 cup cream 1 pinch salt 1 tsp pure vanilla extract 1/2 cup milk Melt chocolate over low heat while heating milk over low heat. Gradually stir milk into melted chocolate. If you don't stir milk in gradually, chocolate will clump and you will have difficulty breaking it down. If you stir milk in gradually, chocolate will clump, but you'll be able to break it down when you add a little more milk. Heat while stirring until smooth. Mixture will become thick. Beat sugar into eggs. Stir in hot chocolate/milk mixture into eggs. Add cream, salk, vanilla, and extra 1/2 cup milk. Cool. Freeze in ice cream maker. This is a variation of Ben's Chocolate. I goofed when I made it (I didn't stir the milk in gradually) so there were bits of unmelted chocolate in the ice cream.
