Chocolate (October 10, 1993) [1 quart] 1 cup milk 3/8 cup cocoa 1/3 cup sugar 2 eggs 1 cup cream Beat eggs. Beat in 1/6 cup of sugar. Set aside. Mix milk and cocoa and remaining half cup of sugar. Heat just short of boiling. Stir hot milk/cocoa in to eggs. Cool. Add cream. Add to ice cream maker. Chocolate (January 13, 1997) [1.5 quarts] 1 cup sugar 4 egg yolks 2 cups table cream (18% milk fat) 1 cup milk 1/2 cup cocoa 2 tsp vanilla extract Beat eggs. Beat in sugar. Set aside. Heat milk/cream and mix in cocoa while stirring. Heat just short of boiling. Stir hot milk/cocoa in to eggs. Cool. Add vanilla extract. Add to ice cream maker.
