Chocolate Almond (November 18, 1993) [1 quart] 2 oz bittersweet chocolate 1 cup half and half 1/4 cup cocoa 3/4 cup sugar 4 egg yolks 2 cups table cream 1 tsp vanilla 1 cup almonds In small bowl, mix cocoa and 1/2 cup of sugar. In a large bowl, beat egg yolk, then beat in 1/4 sugar. Melt chocolate over low heat. Add half and half and bring to a boil. Add chocolate milk mixture to eggs, stirring constantly. Stir in cocoa sugar mixture. Stir until smooth. Cool. Add cream and vanilla. Make in ice cream maker. Add almonds shortly before frozen.
