Mandarin Chocolate (January 20, 1994) 1.5 oz bittersweet chocolate 5 Egg Yolks 3/4 cup sugar 2 cups half-and-half 5 tbl cocoa powder 2 cups table cream 1.5 tsp orange extract Beat eggs yolks together with 1/2 cup sugar Melt chocolate over low heat Warm half-and-half to a near boil Mix heated half-and-half with cocoa powder and 1/4 cup sugar. Add to melted chocolate. Add heated half-and-half/chocolate mixture to beaten egg yolks Cool. Add cream and orange extract. Freeze in ice cream maker. Generally liked, but opinion mixed on amount of orange: I thought the orage flavor was too strong; others thought it was too weak.
