Vanilla I (October 27, 1993) 2 cups half and half 1 cup table cream 1/2 cup sugar 5 egg yolks 2 egg whites 2 tsp vanilla Beat egg yolks and whites together. Beat in sugar. Mix half-and-half with cream in a sauce pan and bring almost to a boil. Beat heated cream into eggs. Return to sauce pan and cook on low heat for 5 minutes or until it thickens (which ever comes first). Cool. Add vanilla. Make in ice cream machine. This is a very light vanilla ice cream. More appropriate for summer than October. ======================================================================= Vanilla II (September 11, 1994) 2 eggs 3/4 cup sugar 1 cup milk 1 cup table cream 1 cup whipping cream 1 tbl vanilla Beat egg. Beat in sugar. Mix milk and table cream in a sauce pan and bring almost to a boil. Beat heated cream into eggs. Cool. Add whipping cream, vanilla. Make in ice cream machine. Excellent. ======================================================================= Vanilla III (November 11, 1994) 2 cups whipping cream 1 cup skim milk 3/4 cup sugar 1 tbl vanilla Combine cream and milk Beat in sugar until dissolved. Add vanilla. Make in ice cream machine. This recipe was made in a hand cranked machine. The milk fat percentage is probably too high for an electrically cranked machine. ======================================================================= Vanilla IV (1995) 1 litre table cream 2/3 cup sugar 2 tbl vanilla Combine cream and sugar. Stir over heat until sugar disovled. Add vanilla. Cool. Make in ice cream machine. Variations: Cinnamon Reduce vanilla to 1 tbl Add 1 tsp cinnamon Nutmeg Reduce vanilla to 1 tbl Add 1/2 tsp nutmeg
